Chestnut Fillet

4 fillets of beef medium thickness 300 g boiled chestnuts (you can add a bay leaf) 100 g Pancetta or bacon in a single cut 1 dl warm milk or broth 1 small onion 1 clove garlic, olive oil, salt and pepper.

Peel the chestnuts. Cut bacon in small dice, in a saucepan add a little oil and fry the onion until caramelized, add the finely chopped garlic clove, when it became clear and crisp, not dry, add broth, salt and pepper, chestnuts and boil slowly for about ten minutes, stirring gently. Cook the steaks according to your taste, place in pan with the chestnuts, cook for a couple of minutes and serve hot. Preparation for 4 portions
