Chocolate and chestnut dumplings

Chocolate and chestnut dumplings are an original and surprising first course that combines tradition and innovation. 

Dumplings, typical of Tyrolean cuisine, are here reinterpreted in a sweet way, turning into an enveloping dish full of flavour. 

Made with a dough of bread, dark chocolate and chestnuts, these soft dumplings offer a perfect balance between the sweetness of the chocolate and the earthy flavour of the chestnuts. 

Served with a delicate butter sauce or light cream, chocolate and chestnut dumplings prove to be a unique and refined culinary experience, ideal to impress your guests at a special dinner party. 

This dish represents a perfect marriage of autumnal flavours and gastronomic tradition, offering a journey of taste that conquers the palate with every bite.

Ingredients

  • 4 marron glacés
  • dark chocolate 60 g
  • whole milk 1.25dl
  • semolina 40 g
  • white breadcrumbs 50g
  • 1 egg+one yolk
  • 1 sachet of vanilla sugar
  • cinnamon to taste
  • add a small glass of rum


Preparation

Bring the milk, 30 g butter, rum, vanilla sugar and a pinch of salt to the boil.

Add the semolina and cook for about ten minutes. Add the chopped bread, egg+yolk and chocolate chips.

Mix well and leave to cool. Divide the mixture into 4 parts and wrap them around the 4 marron glacés Boil the dumplings in salted water. 

Drain the dumplings well and place one on each plate: sprinkle with melted butter and cinnamon
