Chestnut fritters are a rustic and delicious dessert, which encloses all the natural sweetness of chestnuts in a crunchy and soft bite.
Perfect for autumn days, these fritters are prepared with chestnut flour, which gives a unique and slightly sweet flavor, enhanced by light frying.
Often served with a dusting of powdered sugar or accompanied by honey and dried fruit, these fritters are ideal for those looking for a simple but tasty dessert, perfect to share at the end of a meal or during a snack.
A dessert that celebrates the traditions of Italian cuisine and the authentic flavors of the season.
Start by preparing a fairly thick mixture with the chestnut flour and a glass of water. Add the water little by little so you can adjust the density ... if it becomes too liquid, add more flour.
At this point add a little crumbled dried rosemary and a cup of raisins that you will rehydrate with warm water, then a pinch of salt and work a little more. In a pan, heat the olive oil and when it is very hot, slide small quantities of the prepared mixture into it.
Let the fritters brown and arrange them on a sheet of absorbent paper. Serve them still hot after dusting them with icing sugar or adding a ricotta cream prepared in this way: work the ricotta with the sugar in a bowl, add pine nuts and more raisins. Work until you obtain a soft cream and garnish each fritter.
