Soften the gelatine sheets in cold water. Finely chop the chocolate and melt it in a bain-marie in a steel or glass bowl, stirring constantly with a spoon.
Beat the egg, egg yolk, sugar and vanilla sugar in a bowl in a bain-marie until smooth, then stir until cool. Melt the gelatine in a bain-marie together with the rum.
Add the chocolate and gelatine to the egg mixture, stirring until smooth. Add the chestnut puree. Finally, gently pour in the whipped cream. Place the mousse in a suitable container, cover and chill in the fridge for 2 hours.
